EXPERIENCE
Minerals tingling on your tongue, kissed by a sea spray; fresh, dry, with a subtle sparkle. A beautiful ballad featuring a cold infusion of oyster shells and dulse seaweed combined with Dutch gooseberries. Prickly green gooseberry has wonderful fruity, tart, and sour flavors, which we sometimes call “Dutch Muscat.” Medium-plus bodied, refreshing, and salty with loads of minerality. A journey to maritime cliffs. You just feel that sea breeze howling.
HOW IT’S MADE
We pick and clean our empty North Sea oyster shells by hand. After 7 days of infusing with seaweed in acidic water, we filter and pasteurize our infusion. The saltiness creates a mineral balance between the fresh juices and aromatic herbs. Organic Pecorino & Chardonnay grapes from Italy & Germany via Chateau Amsterdam.
