HOW IT’S MADE
Based on wine grape juice but gains its character from pear juice, infusions of pearwood, verbena, and alfalfa, and gets its bitterness from gentian. A surprising composition of grapes, fermentations, and infusions. At Cul Sec, the Fruitslagers start like a grapevine does with the terroir. The grapes sourced from Germany and Italy are then lightly fermented to <0.5% ABV. The peels are, in turn, steeped in kefir and kombucha with oak wood, to obtain the tannins and bitter substances that result from fermentation in wine. For the right texture, different types of sharpness are used to slightly warm the throat and complete the mouthfeel. An infusion of herbs and wood, such as pearwood from the local Schevichoven regenerative farm and Lingehout food forest, completes the wine alternative.
