But over time, the hangovers caught up.
De-alcoholised wine seemed like the obvious solution. It wasn’t.
Flat. Sweet. Pretending. Nothing that made you want a second glass.
One night, during a fermentation experiment, something unexpected happened.
They created a ferment with everything they’d been missing: structure, depth and length.
And all that without a droplet of alcohol.
Suddenly, it became obvious:
The problem wasn’t the absence of alcohol.
The problem was trying to make wine something it’s not.
To recreate the wine experience, you can’t start from wine.
You start from scratch.
