Two scientists who loved the ritual of wine — the pause, the conversation, the way a glass could mark a moment. But over time, the hangovers caught up. De-alcoholized wine seemed like the obvious solution, but it wasn’t. Flat. Sweet. Pretending. Nothing that made you want a second glass.
One night, during a fermentation experiment, something unexpected happened. They accidentally created a ferment with everything they’d been missing. Structure. Depth. Length. And all that without a droplet of alcohol. That’s when it clicked: The problem wasn’t the absence of alcohol.
The problem was trying to copy wine. Because to recreate the wine experience, you can’t start from wine. You start from zero. You make a drink that is intentionally non-alcoholic. After years of R&D — the idea became a reality. SHWUNG.
